Strozzapretti Overview
Rustichella d'Abruzzo ("little rustic thing from Abruzzo") is a throwback to a simpler time. Made by artisans, the pasta is shaped in bronze dies and dried slowly in warm rooms, carefully preserving its durum wheat character, and producing a porous surface. Italian for "priest strangler," these medium strands resemble unevenly cut, rolled parchment paper. As for the name, according to legend, priests have been so taken with strozzapreti and tomato sauce that they have been known to gorge themselves on it.
